Sauvignon Blanc is sourced from various vineyards in the cool coastal region. A percentage of the grapes are picked earlier to retain acidity while the balance is picked at optimal ripeness. Careful winemaking practices were followed to maintain the aromatics. Crushed, lightly pressed and settled overnight. Fermentation was done with a selected yeast strain at 12-13oC and left on lees for six weeks before racking to the second production phase. Great care is taken at this stage to work as gently as possible to retain all the exquisite flavours from fermentation. The alcohol is removed via spinning cone technology at low temperatures under a vacuum. The initial phase is first to remove the flavour and set it aside. Then the alcohol is removed, and we can return the favour to the de-alcoholized wine.
