TASTING NOTES

Lautus sourced Pinotage grapes for their Rosé wine from Voor Paardeberg, a small wine-growing area close to Paarl in the Western Cape region of South Africa. Great care was taken whilst removing the alcohol from this fresh rosé wine. They use smaller bunches and berries that result in a higher flavour concentration. You can expect an opulent strawberry and redberry fruit profile perfect for any occasion. To be enjoyed in its purest and natural form, without the restrictions of alcohol.

METHOD

The alcohol is removed via a spinning cone technology at low temperature under vacuum. The initial phase is first to remove the flavour and set it aside. Then the alcohol is removed, and once done, they take the flavour back to the dealcoholized wine. There is significant volume lost during this process; a portion of the alcohol water is then again put through the process to extract the water and added back. This helps to fill out the palate and balance acidity. Normal winemaking practices are followed from here in preparation for bottling.
